The Cook Tank part of the Capkold® family is designed to slow cook vacuum packaged meats,poultry and prepared foods in a circulating hot water bath. Slow cooking at lower temperatures in sealed plastic casings radically reduces meat shrinkage, while retaining more meat juices and enhancing natural flavours.

Construction

Dual purpose stainless steel cylindrical tank, used for either tumble chilling of kettle produced items or stationary cooking/cooling of solid muscle items, e.g. roasts, complete with the following:

Features

Spring assisted hinged tank cover, with built - in interlock safety switch.
Perforated rotating inner cylinder with lockable access door, for loading and unloading of the product. (CTTC models only)
Pre - piped ASME Code heat exchanger for heating and cooling of process water, mounted inside stainless steel controls/piping cabinet.
Pre - piped water circulation pump is electrically powered and protected by inline strainer and low water shut - off.
Tank mounted on six (6) stainless steel legs with adjustable levelling flanges.
